1Put chicken carcass , carrots , celery , onion , garlic , black peppercorns , salt , thyme , parsley , and bay leaf into Instant Pot . Fill with about water – to just below max.chicken carcass: 1 (from a 3-4lb chicken), carrots: 2 (medium-sized, chopped into large pieces), celery: 2-3 ribs (chopped into large pieces), onion: 1 (unpeeled, sliced in quarters through the root), garlic: 1 (head), black peppercorns: 1 tsp, salt: 1 tsp, thyme: 1-2 tsp, parsley: 1-2 tsp, bay leaf: 1, water: 12 c
